Healthy Eating

I have to teach a class tonight for our Relief Society Enrichment on healthy eating. I know I cook and have a nutrition background, but as of late I feel incompetent to be teaching. Our schedule has been such that I haven't done a lot of cooking. Hopefully after teaching this class I will be more motivated to be eating better. I need to practice what I am preaching.

Healthy Tip of the Day: Lots of fiber-rich foods (brown rice, beans, bananas, etc.) can be a great way to help slim down.

NICOLE! of course you can teach!! you are a great teacher and you are the most Mrs Gourmet-nutrition-lady ever! you'll do great, good luck, I wish I could be at your class.

AND I'M GLAD YOU ARE BLOGGING AGAIN!
sorry about all the hospital visits over the holidays, no fun, I hope everyone is ship shape & feeling better now!

and PS if your bananas go bad you can always make banana bread!!!!
